The end of the year is the perfect time to reminisce, so I decided to review my favorite recipes from 2022!
I’ll be honest, it wasn’t easy to pare this list down. It was fun to look through all the recipes I have shared and make a list of those that stood out for me.
Main Dish
First things first, I have to talk about the baked orange chicken pictured above. The lightly coated chicken is covered with a sweet, tangy, indulgent sauce. The recipe is a bit time-consuming as it involved pan-frying the chicken to achieve the crisp coating. Then some time in the oven is needed for the sauce to get perfectly thick and sticky. But it is 100% worth every minute.
Pasta is my love language, which made including this pesto ravioli a no-brainer. Quality store-bought pesto and ravioli make this dish really quick and easy. I like to open a bottle of wine and serve this yummy pasta for date night.
Chicken wild rice casserole is a great weekend dinner. Tender chicken, hardy wild rice, and a generous amount of cheddar cheese make this an irresistible meal.
Side Dish
I have always loved glazed carrots, but until this year was underwhelmed with every recipe I tried. This is not only the easiest version I have ever tried, it is most certainly the best.
Soup
I don’t know why I didn’t try chicken tortilla soup sooner. We love Mexican-inspired foods, and this soup is so easy and so flavorful. The soup is made even better with toppings like avocado and cilantro.
Sandwich
To this day, I haven’t tried the famous Popeye’s spicy chicken sandwich, but I sure like my version. The chicken is breaded and pan-fried and topped with a simple hot honey sauce.
Salad
Husband likes salad just fine, but he doesn’t typically rave about them. Chopped Thai peanut chicken salad is a rave-worthy salad.
Breakfast
While I knew carrots, coconut, and pecans would be good together, these muffins are even better than I expected.
Dessert
This cake makes my mouth water. Coconut cake for two is the perfect treat for a special night.
Appetizer
Every so often, I like to do happy hour at home. Spicy queso dip is right up our alley.
Cocktail
Boozy pumpkin pie in a martini glass. Lovely as a pre-dinner drink or a dessert and after-dinner cocktail in one!
Okay, now I am hungry! I’m also excited to try some new recipes for 2023. 🙂
