Favorite Mexican-Inspired Recipes

With Cinco de Mayo right around the corner, what better time to revisit some Mexican-inspired favorite recipes!

Last week, I shared these Mexican corn turkey bowls. I got to thinking about how many great Mexican-inspired recipes we enjoy. We love the bold, spicy flavors, and most of the meals are quick and easy.

It was hard to narrow down a list, as I love these recipes so much.

Main Dish

Chicken avocado enchiladas make a very regular appearance on my menus. I also make enchiladas with ground turkey and shrimp, but I always come back to this favorite. I love the tender chicken and creamy avocado in an enchilada. The slightly spicy, creamy sauce is the perfect finishing touch.

Sheet-pan fajitas are one of the easiest meals out there. Chicken and veggies get tossed with spices and baked on a sheet pan. Tuck them into tortillas with salsa, avocado, and cilantro, and dinner is done.

Tex-Mex stuffed peppers are another easy, healthy meal that comes together quickly. Keep it a vegetarian option or add ground turkey.

Side Dish

Mexican roasted vegetables are the perfect side for enchiladas and tacos. Onions, peppers, and zucchini are seasoned and roasted on a sheet pan.

Mexican street corn salad is especially tasty in late summer with fresh sweet corn.

Breakfast

Don’t limit Mexican-inspired meals to dinner. These flavors are equally delicious any time of day.

Heuvos Rancheros are one of my favorite breakfasts. Mine is vegetarian style, and I add some sausage to Hubby’s portion.

I love potatoes with breakfast. I have been doing skillet potatoes with veggies and eggs for years. Tex-Mex breakfast skillet is a delicious version enhanced with spices and served with avocado and cilantro.

I would also love a plate of breakfast tacos. These tortilla wraps also need to make an appearance on my weekend menu.
