Pineapple lime coconut rice is made incredibly easy using a rice cooker.
While we often eat simple, steamed rice as the side to the main dish, I am increasingly intrigued with adding ingredients to the rice to give it flavor. This Caribbean-inspired recipe features rice cooked in a mixture of coconut milk and spices.
Uncooked White Rice: Plain white rice is the base of the recipe.
Crushed Pineapple: I usually just use canned crushed pineapple. The leftovers are then frozen to use in future recipes. If you happen to have fresh pineapple, just dice it finely and throw it in.
Light Coconut Milk: The rice cooks in the coconut milk; infusing the flavor. If you have never had coconut rice before, it is really a treat.
Lime Zest: The zest from citrus has so much flavor.
Lime Juice: The lime juice adds tartness to contrast the sweetness of pineapple and coconut.
Add uncooked rice to your rice cooker. We have been using this simple rice cooker for years. It makes a small batch, which is perfect for the two of us. If you make rice regularly, a rice cooker really is worth the investment. They are an easy way to ensure a perfectly cooked batch of rice every time.
If you were making simple steamed rice, you would simply add water, turn the machine on, and be done. But now we will add the flavors to make the rice delicious. Stir in the crushed pineapple, coconut milk, lime zest, and lime juice. Add a half cup of water, or enough water as indicated by the rice cooker.
Turn on your machine and cook as usual.
Rice Cooker Pineapple Lime Coconut Rice
- 1 cup uncooked white rice
- 2 Tbsp crushed pineapple
- ½ cup lite coconut milk
- 1 tsp grated lime zest
- 1 Tbsp lime juice
- ½ cup water See Instructions
- Start by rinsing the uncooked rice with water until the water runs clear. Add to your rice cooker. Add crushed pineapple, coconut milk, lime zest, and lime juice to the rice cooker and stir to combine. Add a half cup of water or as indicated by your rice cooker
- Turn on the rice cooker and cook rice as usual.
