Parmesan Roasted Green Beans

Parmesan roasted green beans are a great twist on traditional roasted veggies.

Roasted vegetables are the best. They are the easiest way to add a healthy vegetable to your meals. Broccoli, Brussels sprouts, and green beans are some of my favorites.

If you typically eat steamed or boiled veggies, you are in for a treat. During the roasting process, vegetables become crisp and flavorful. No more sad, soggy veggies! Roasting with oil, salt, and pepper creates delicious vegetables. The addition of fresh parmesan cheese makes it even better.

Elements

Green Beans: Select fresh green beans that are bright in color and free of blemishes.

Olive Oil: Oil is very important in the roasting process to help the veggies get crispy.

Salt: Brings out the natural flavor of the green beans.

Parmesan Cheese: Freshly grated parmesan cheese adds a great touch to so many of my favorite foods. We love it on homemade pizza, pasta, sheet pan dinners, and vegetables.

Preparation

Preheat the oven.

Wash your green beans and trim off the ends and any brown spots. Toss the beans in olive oil. You can place them in a bowl or on a sheet pan. I usually save myself a dish to wash and toss the beans on the sheet pan.

Sprinkle evenly with salt and pepper, then the parmesan cheese.

Roast for 20-25 minutes. The duration will depend on your beans. The beans will be tender and a little shiveled-looking when they are done.

Serve immediately. Parmesan roasted great beans are great with a variety of main dishes. I served them recently for a weekend lunch with turkey stuffed potatoes.

Ingredients
  

  • ½ pound fresh green beans washed and trimmed
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper freshly ground
  • 1 Tbsp parmesan cheese freshly grated

Instructions
 

  • Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper.
  • Add the green beans to the baking sheet. Toss with olive oil, then sprinkle with salt and pepper. Sprinkle evenly with grated parmesan.
  • Roast in the oven for 20-25 minutes until tender. Serve immediately.
