Five spice chicken sheet pan is easy, healthy, and so delicious.
A head of cabbage is very likely to be sitting in your vegetable drawer this time of year. Cabbage is associated with St. Patrick’s Day and tends to go on sale this week. I don’t do the traditional corned beef and cabbage. But I enjoy cabbage roasted, sautéed, and made into salads and classic coleslaw.
Ingredients
Olive Oil: Used in the marinade for the chicken and to help the cabbage roast and become tender and delicious.
Honey: Adds a little sweetness to the sauce.
Soy Sauce: Adds savory, salty flavor to the sauce.
Five Spice Powder: Five spice powder is a Chinese spice mixture. I bought a jar years ago to make this delicious stir-fry. It is a mixture of sweet and savory and very flavorful.
Chicken Breast: I used one chicken breast for the two of us. You could also use chicken thighs.
Green Cabbage: You will use about half of a small head of cabbage for this recipe. Cabbage is healthy, versatile, and inexpensive.
Salt & Black Pepper: Added to taste to the cabbage for flavor.
Instructions
Preheat your oven.
In a bowl, combine one tablespoon of olive oil, honey, soy sauce, and the five spice powder. Add the chicken and let it marinate in the mixture while you prep your cabbage.
Slice your cabbage into about one-inch wedges. Some heads of cabbage are more dense than others and produce tight wedges that stay together. My cabbage happened to be less dense and the wedges came apart. No worries, it roasts up delicious either way. Sprinkle with cabbage with salt and pepper and drizzle with remaining olive oil. Toss the cabbage to coat.
Place the chicken on top of the cabbage. Drizzle all the marinade over the chicken and cabbage.
Plate your five spice chicken sheet pan and cabbage and enjoy immediately.
Five Spice Chicken Sheet Pan
Ingredients
- 2 Tbsp olive oil divided
- 2 tsp honey
- 2 tsp soy sauce
- 1 tsp five spice powder
- 1 garlic clove minced
- 1 chicken breast sliced in half length-wise
- ½ small green cabbage cored and cut into 1-inch wedges
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Stir together one tablespoon of olive oil, honey, soy sauce, five spice powder, and garlic in a bowl. Add the chicken to the marinade. Allow the chicken to sit in the marinade while you prep the remaining ingredients.
- Preheat the oven to 425℉. Prep a sheet pan with cooking spray, if desired.
- Arrange the cabbage wedges. Drizzle with the remaining one Tbsp of olive oil and season with salt and pepper.
- Place the chicken on the sheet pan with the cabbage. Some of the marinade can be sprinkled on the cabbage.
- Roast for 25-30 minutes until the chicken is done and the cabbage is tender. Serve immediately.
