Skillet Chicken and Broccoli Pot Pie

Skillet chicken and broccoli pot pie is a delicious and healthy complete meal.

I have been making this recipe for a while, but until recently used these packaged broccoli tots. They are so good, but I was finding them hard to find in stores. Once I started making these wonderful broccoli-cheddar tots, this skillet dinner was back on the menu.

Ingredients

Butter: Used to sauté the chicken and vegetables while adding rich flavor.

Chicken Breast: Either chicken breasts or thighs will work.

Onion, Celery, Carrots: This combination of veggies is a classic in so many soups and casseroles. I think they complement chicken perfectly.

Garlic: Adds flavor.

Flour: Used to thicken the sauce.

Low Sodium Chicken Stock: The base of the sauce. It also adds additional flavor.

Half & Half: Just a bit of half & half makes the sauce creamy and luscious.

Broccoli: Broccoli is used in both the tots and in the skillet. Perfect for broccoli lovers like us. 🙂

Salt & Black Pepper: Complements and brings out all the flavors.

Thyme: Thyme is wonderful with chicken. I used dried thyme.

Parmesan Cheese: Adds sharp, salty flavor.

Instructions

Start with the broccoli tots. You will bake them for 10 instead of 20 minutes as the recipe states, so they don’t get overdone when added to the skillet.

While the tots are in the oven, we will prepare the rest of the skillet dinner. Be sure you use an oven-safe skillet such as stainless steel or cast iron as we will finish dinner in the oven. Add the chicken, onions, carrots, and celery to the oven with the melted butter.

Once the veggies are starting to soften, sprinkle with flour and stir until the flour is incorporated. Add the stock and half & half and stir. The butter and flour will work together to create a creamy sauce.

Add the broccoli and the spices and cook over medium heat until the broccoli is starting to get tender. Top the skillet with the tots and place in the oven. Bake until the tots are crisp and starting to brown.

Ingredients
  

  • 1 Tbsp butter
  • 1 chicken breast chopped into bite-sized pieces
  • ½ cup onion chopped
  • ½ cup celery chopped
  • ½ cup carrots chopped
  • 1 clove garlic minced
  • ¼ cup flour
  • cups low sodium chicken stock
  • ¼ cup half & half
  • cups chopped broccoli florets
  • ½ tsp salt
  • ½ black pepper
  • ½ tsp thyme
  • ½ cup grated Parmesan cheese
  • Broccoli-Cheddar Tots – see note

Instructions
 

  • Preheat oven to 425°F.
  • Prepare the broccoli-cheddar tots according to directions. Bake them for 10 minutes instead of 20 minutes as you will finish them in the oven with the rest of the dish.
  • Heat a large oven safe skillet over medium heat and melt the butter. Add chicken, onion, celery, and carrots. Sauté until the veggies are starting to soften, about 5 minutes. Add minced garlic, cooking for an additional minute. Sprinkle the flour over the vegetables and stir. Pour in the chicken stock and half & half.
  • Add the broccoli, salt, pepper, thyme, and parmesan cheese. Cook over medium heat until the broccoli is tender-crisp, 5-7 minutes. Top with broccoli-cheddar tots and place in the preheated oven for 10-15 minutes until the tots are crisp and slightly browned.
