If banana bread and a chocolate chip cookie came together, they would form this chocolate banana bread cake for two. Sweet, dense, and rich like any good sweet bread or cookie and definitely the best of both.

Banana and chocolate is an under-appreciated combination. Of course, we will know how well chocolate goes with peanut butter and mint. Chocolate-covered strawberries also come to mind. But other than chocolate-covered frozen bananas the combination really isn’t a thing.

My banana bread tends to be free of anything other than, well, bananas! No nuts and no chocolate chips. But chocolate chips added to what is essentially your own little cup of banana bread makes for one delicious little cake.

As I mentioned in my previous post, this was the dessert to finish our at-home Happy Hour recently. The recipe was originally mug cake on Half Baked Harvest.

Ingredients:

Butter: Because butter makes any baked dessert better!

Banana: This is time for that spotted, overly ripe, soft banana that has been sitting on the counter a few days too long.

Honey or pure Maple Syrup: I tried with both, and the results are equally good.

Egg: Essential for baked goods to bring the cake together and provide richness.

Vanilla Extract: So good with banana and chocolate.

Flour, Baking Soda and Salt: Your basic dry ingredients.

Cinnamon: Excellent with banana.

Chocolate chips or chunks: I loved the dark chocolate chips, but semi-sweet or milk chips or chunks would also be great.

Instructions:

These easy, little cakes come together quickly. Start by melting the butter and adding mashed banana. The banana should be very ripe and easy to mash into a thick paste. Add egg, honey or maple syrup and vanilla extract and stir together.

The dry ingredients are then added. Stir until just combined for a soft, tender cake. Fold in chocolate chips or chunks.

Spoon ingredients equally into two sprayed or greased ramekins.

Bake until the cakes are puffed and a toothpick or cake tester comes back clean. The cakes do turn quite dark due to the banana.

Allow cakes to sit and cool for 5-10 minutes. The cakes are best when cooled slightly but still warm.

Ingredients
  

  • 1 Tbsp butter melted
  • 1 medium overly ripe banana mashed
  • 1 Tbsp honey or maple syrup
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • ¼ tsp salt
  • ¼ cup dark chocolate chunks or chips

Instructions
 

  • In a medium bowl melt the butter.
  • Mash the banana and combine with the butter. Add the honey, egg, and vanilla and mix until combined.
  • Add the flour, baking soda, cinnamon, and salt, mix until just combined. Fold in the chocolate chips.
  • Pour the batter into two greased or sprayed Ramekins.
  • Bake at 350℉ for 22-25 minutes until cake is puffed up and springs back when touched.
  • Allow to cool for 5-10 minutes.
