Favorite Recipes 2024 – Part One

As 2024 comes to a close, I like to look back at my favorite recipes. This is part one, as I had far too many favorites for one post. Of course, I am fond of every recipe I share, but some just seem to stand out.

Sesame Turkey Meatball with Coconut Rice

I saw this recipe and immediately added it to our upcoming menu. Tender meatballs, a flavorful sauce with broccoli and coconut rice, it clicks all the boxes!

Chicken & Vegetable Grill Bowl

For most of us, a grill recipe will have to wait for spring. I don’t think I can convince Hubby to light the grill with snow on the ground. 😉

We have been making dinner using the grill bowl for years. It is sort of a summer version of a sheet-pan dinner. Throw all the ingredients together and let the oven, or in this case, the grill, do the work.

Pesto Chicken & Rice

Pesto adds so much flavor to recipes. Chicken and rice are always delicious together and pesto makes an already tasty dish even better.

Pesto Shrimp with Risotto

Like I said, I love pesto! This time creamy risotto is made even better with the addition of pesto and sun-dried tomatoes.

Egg Roll in a Bowl

I don’t know why I waited so long to try egg roll in a bowl. This healthy and delicious meal is great for a quick, easy meal.

Tuna Pasta Salad

This is another recipe I have been making for many years. I was first introduced to it by my mother-in-law. Heck, maybe even before we were married. She loved it, I love it, and I have been making it every summer since.

Spiced Butternut Squash Soup

I like making a pot of soup as meal prep for lunches during the winter. A cup of soup with my ever-present salad hits the spot. I tried butternut squash soup a few times before adding five-spice powder and Garam Masalato to amp up the flavor. Those warm spices add a great touch.

Crispy Baked Breakfast Tacos

This is the newest entry in my rotation of weekend breakfast ideas. You have breakfast meat, cheese, and eggs—what could be better? Baking the tacos crisps up the shells and melts the cheese. So good.

This was part one of my favorite recipes of the year, stay tuned for part two!
