Hubby reminded me the other day that we started this blog five years ago! I had decided my birthday was as good a day as any to start. Of course, this was 2020, and we were deep in the COVID-19 pandemic. Birthdays and everything else were a little subdued.
Today happens to be my day off. As with a typical Tuesday, we will do our midweek grocery shopping. I did treat myself to a free birthday Starbucks and some fun shopping. Plus lunch out.
We both had coconut chicken bowls. Peanut sauce on mine and sweet chili sauce for hubby. Yum!
I decided to go out for lunch and enjoy my usual Tuesday lunch for dinner. I will bake a salmon filet and serve it over my spinach salad. Husband is not a salmon fan, but I love it. After dinner, we will settle in for the Lynx game.
The Minnesota Lynx are on a major roll. Even without their star, they have continued to win. They have won their last two games against the defending WNBA champs. They face the New York Liberty again tonight, hoping for three straight.
Grateful for another year. 🙂
