
One-pan turkey stroganoff is a quick, easy version of a classic recipe. It consists of ground turkey, tender mushrooms, egg noodles, and a creamy, tangy sauce. It’s pure comfort food!
Classic stroganoff is made with beef. I have been substituting ground turkey when I make stroganoff for years, like this turkey meatball variety. This one-pan version is easier than traditional stroganoff.

Olive Oil: Used to sauté the mushrooms and onions.
Mushrooms & Onions: Mushrooms are a must-have in stroganoff. I use portabella mushrooms, which hold up nicely to the sauté process. We always have red onions in the house, but white or yellow onions would be great.
Ground Turkey: Ground beef or chicken would also work.
Garlic: Garlic and mushrooms are an excellent combination. Garlic adds great flavor to any savory dish.
Flour: Flour thickens the sauce.
Thyme: Thyme is one of my favorite herbs to use with chicken or turkey.
Paprika: Adds a bit of smoky flavor and color.
Salt & Black Pepper: Brings out the flavor.
Worcestershire Sauce: This fermented, tangy sauce adds a depth of flavor.
Low Sodium Chicken Stock: The egg noodles will cook in the stock and absorb the flavor.
Dry Egg Noodles: Any dried egg noodles will work. I used the extra-wide noodles.
Cream Cheese: Adds rich, tangy flavor and makes the sauce rich and indulgent.
Sour Cream: Sour cream makes the stroganoff creamy and delicious.

Preparation
You will start by sautéing the mushrooms and onions. Once they begin to soften, add the ground turkey. Break up the meat into small pieces as it cooks, so you get ground turkey with every bite. When the turkey is cooked, add the garlic. Stir in the flour, paprika, salt, and pepper. Cook and stir for about a minute until the flour dissolves.
Add the Worcestershire sauce and chicken stock to the pan. Stir in the egg noodles and make sure they are submerged in the liquid. Heat to a boil, then simmer until the noodles are just tender.
Finally, add the cream cheese and sour cream. Allow the cream cheese to melt and turn to low. The mixture will heat through and thicken slightly as it sits.

Serve one-pan turkey stroganoff with a vegetable side like broccoli. Enjoy!
One-Pan Turkey Stroganoff
Ingredients
- 2 cups mushrooms sliced
- ½ cup onion chopped
- ½ lb ground turkey
- 2 cloves garlic minced
- 1 Tbsp flour
- ½ tsp paprika
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 2 tsp Worcestershire sauce
- 1¾ cups low sodium chicken stock
- 1½ cups dry egg noodles
- 1 ounce cream cheese
- ¼ cup sour cream
Instructions
- In a large skillet, sauté mushrooms and onions in cooking spray until slightly brown and soft, about 5 minutes.
- Add ground turkey and cook until turkey is crumbled and brown, about 5-7 minutes. Add garlic, flour, paprika, thyme, salt, and pepper stir to combine for about a minute.
- Add Worcestershire sauce, chicken stock, and egg noodles to the pan. Gently mix together until egg noodles are submerged in the liquid.
- Bring to a boil, then cover and lower the heat to a simmer. Cook for about 15 minutes, or until noodles are tender.
- Turn heat to low and gently stir in cream cheese and sour cream. Continue to stir until cream cheese is completely melted. Allow the stroganoff to sit for a few minutes to thicken.
- Serve and enjoy.
