Minnesotans are a hardy people.
That was my statement to Hubby walking through a store this past Monday. The store wasn’t busy, but certainly not empty. There was also a fair amount of people in the 60s, 70s and up. I was impressed by all of us as it was -10 degrees and windy outside. Why were any of us out?? But it didn’t stop us from our weekly shopping, nor the rest of those resilient souls.
I have recently shared wild rice soup and turkey stroganoff recipes. I would confirm both are excellent choices when the weather is freezing. Although it is going to warm up starting this weekend!

This article inspired me to ask the same of ChatGPT. It was wholesome! I have been tweaking my fitness routine for years and am confident in what works for me. For me, I do three days of strength training, which is so important. Other days, a mix of cardio, yoga, Pilates, and boxing. I just have fun. When I entered my routine I was encouraged to get adequate sleep (because that is so easy…) and to properly fuel my body.
Sofrita bowl is my go-to order from Chipotle. This copycat recipe sounds like a perfect meal prep for lunch. I have tried tofu at home before to less than stellar results. Crisping up the tofu in the oven is genius!
