Strawberry cobbler is a perfect summer dessert for two. Fresh strawberries and sweet, buttery cobbler with a dollop of whipped topping, what could be better?
Late June is the prime strawberry season in Minnesota. Whether locally grown or found in the grocery store, they are at their peak.
I love a small-batch dessert. Hubby and I get a sweet treat without a huge pan of leftovers. Strawberry shortcake is a favorite this time of year. This strawberry cobbler comes together really quickly for an easy little dessert anytime.
Ingredients
Fresh Strawberries: Select red, perfectly ripe strawberries.
Sugar: A little sugar combines with the strawberries and sweetens the cobbler.
Flour & Baking Powder: Provides structure and the leavening agent for the cobbler.
Salt: Enhances the flavor and balances the sweet flavors.
Butter: Gives the cobbler richness.
Milk: Allows the dry ingredients and butter to combine. I use either almond milk of skim milk.
Vanilla Extract: Added pop of flavor.
Whipped Topping: A dollop of whip topping is the perfect finishing touch.
Instructions
Preheat the oven and start preparing the strawberries. Chop the strawberries and toss with a teaspoon of sugar. The strawberries will soften and get juicy in the sugar.
While the strawberries sit, combine the dry ingredients. Press the butter into the dry ingredients with a fork until incorporated and resembles a loose crumble. Sometimes I use my fingers in place of a fork. Then stir in the milk and vanilla.
Divide the strawberries between two ramekins. Then spoon the cobbler mixture evenly between the two ramekins. Bake until lightly golden, and you see strawberry juice peeking around the corners of the cobbler.
Enjoy with a dollop of whip topping. Vanilla ice cream would also be delicious. Enjoy!
Strawberry Cobbler For Two
Ingredients
- 1 cup fresh strawberries chopped into small pieces
- 1 tsp sugar
- ¼ cup flour
- 2 Tbsp sugar
- ½ tsp baking powder
- ⅛ tsp salt
- 1 Tbsp butter
- ¼ cup milk
- ¼ tsp vanilla extract
- whipped topping for serving
Instructions
- Preheat oven to 375° F. Lightly spray 2 ramekins with nonstick cooking spray. Place ramekins on a baking sheet.
- Chop strawberries and toss with 1 tsp for sugar. Divide equally between the two ramekins.
- In a small bowl, mix together flour, sugar, baking powder, and salt until well combined. Mix in butter with a fork or your fingers until crumbly. Stir in milk and vanilla until just combined. Spoon over top of the strawberries.
- Bake cobblers for about 22-25 minutes until the cobbler is set and lightly brown. You will likely see strawberry juice bubbling up around the edges of the cobbler.
- Cool until warm or room temperature then top with a dollop of whipped topping.
