Lemon parmesan asparagus is a great way to use this terrific spring veggie. The bright flavor of lemon and the sharp, salty parmesan cheese perfectly complement the asparagus.
We eat roasted vegetables all the time, like 3-4 times a week. Often, it’s simple with olive oil, salt, and pepper. The recipe is still simple, just a bit more flavor with ingredients I always have available.
Ingredients
Asparagus: Choose bright green asparagus stalks of similar widths, so they roast equally. When I buy a bunch of asparagus I plan on half a pound for two servings. This means I get two servings from one bunch.
Olive Oil: My favorite oil for roasted veggies.
Salt & Black Pepper: Enhances the flavors of the asparagus.
Lemon Juice: I have used bottled or fresh lemon juice. Just a sprinkle adds a lovely brightness.
Parmesan Cheese: Parmesan cheese is amazing on pizza, pasta, and vegetables!
Instructions
Preheat your oven. Trim the asparagus by cutting or snapping off the hard, woody ends.
If you have ever made roasted asparagus, you already know the basis of the recipe. Arrange the asparagus in a baking dish and sprinkle with salt and pepper. Drizzle with olive oil and swish the stalks around until they are equally coated with oil and seasonings.
Roast the asparagus. If you have thin stalks, they are likely done at 15 minutes. If you have thicker stalks, they will need 18 minutes to become tender.
Remove from the oven and immediately sprinkle with lemon juice and parmesan cheese.
Lemon parmesan asparagus is a wonderful side with a variety of main dishes. I recently served it with pesto meatballs and sautéed cabbage.
It was also delicious as a side with ground turkey pasta.

- ½ lb asparagus trimmed of tough ends
- 1 Tbsp olive oil
- salt and freshly ground black pepper to taste
- 2 tsp lemon juice
- 1 Tbsp parmesan cheese grated

- Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt, and pepper. Gently toss to combine. Place into oven and roast for 15-18 minutes or until tender. This will vary depending upon the thickness of the asparagus stalks.
