Tex Mex Breakfast casserole

Breakfast casseroles are perfect for a cozy, weekend breakfast or brunch. They take a little time to put together and bake; but so very easy. This casserole has a Tex Mex element with spicy turkey sausage, peppers, onions, Mexican cheese, chili powder and cumin. But also eggs and potatoes so definitely meant for breakfast.

Much like my equally delicious broccoli frittata this recipe is a great way to use up leftover vegetables for the week.

Ingredients:

Potato: The base of the casserole. Use either a microwaved potato or a leftover baked potato.

Turkey: Ground turkey, turkey sausage, or our favorite; Chorizo turkey sausage! This casserole could also be meatless.

Vegetables: About 1 1/2 cups of mixed chopped vegetables. Onions and peppers are perfect; a jalapeño if you like spicy. I like including zucchini. Spinach or other greens would work as well.

Spices: Chili powder and cumin for the great Tex Mex flavor. Cayenne pepper is great for extra heat.

Eggs: The essential savory breakfast casserole ingredient.

Half & Half: Just one Tablespoon provides some great richness.

Cheese: Eggs and cheese…..what more do you need? Use Mexican cheese, pepper jack cheese, cheddar cheese; whatever you like.

Toppings: Avocado, cilantro, lime and salsa are all delicious. Some fresh tomato would also be nice.

Instructions:

This casserole truly couldn’t be easier to put together. Start with chopping the potato into small bite-sized pieces and spread evenly in the bottom of your prepped 8×8 casserole dish.

Cook sausage and vegetables in a skillet until sausage is brown and vegetables are somewhat tender. Layer across potatoes.

Sprinkle with cheese then pour beaten eggs, half & half and black pepper mixture. Add salt if desired but consider the sausage and cheese does contribute a fair amount of salt.

Bake until eggs are slightly puffed and a knife comes out clean when inserted in the center.

This recipe yields four generous servings. Leftovers re-heat very well in the microwave. Breakfast on Saturday morning turns into an easy leftovers on Sunday!

Ingredients

  • 1 medium cooked potato diced into bite sized pieces
  • ½ pound turkey sausage or chorizo turkey sausage
  • ½ cup onion chopped
  • ½ cup red pepper chopped
  • ½ cup zucchini chopped
  • 1 jalapeño pepper chopped
  • ½ tsp chili powder
  • ½ tsp cumin
  • 1 cup shredded Mexican cheese
  • 6 large eggs
  • 1 Tbsp half & half
  • fresh cracked black pepper

toppings

  • 1 small haas avocado sliced
  • 2 Tbsp chopped cilantro
  • fresh lime
  • salsa

Instructions
 

  • Preheat the oven to 325°F.
  • Spray a 8 x 8 square baking dish with cooking spray.
  • Place the potatoes in the baking dish.
  • Sauté turkey sausage and all the vegetables in a large frying pan. Stir in the chili powder and cumin. Sprinkle the mixture over the potatoes. Sprinkle cheese over the sausage and vegetables.
  • In medium bowl beat eggs and black pepper with a whisk until well blended. Pour over cheese and sausage.
  • Bake uncovered 40-45 minutes or until knife inserted near center comes out clean. Allow to sit a few minutes before serving.
  • Cut into 4 squares and serve with avocado, cilantro, fresh lime and salsa.

    Amazing! This blog looks exactly like my old one! It’s on a totally different subject but it has pretty much the same layout and design. Superb choice of colors!
