Chicken with Charred Tomatoes & Burrata

Chicken with charred tomatoes and burrata cheese looks special and fancy, but is simple to make.

This recipe looks special and fancy because it is. We are celebrating our anniversary this week. A dish with juicy chicken, tomatoes, and creamy burrata finished with fresh basil would be more than worthy of a celebratory dinner.

We loved this recipe as is with a vegetable side the first time I made it. Hubby mentioned it would be really good over pasta, so I tried it the next time. I served it with a small serving of whole wheat spaghetti pasta, and it was wonderful.

Elements

Tomatoes: Cherry tomatoes would be my first choice for this recipe. Grape tomatoes also work fine. I have high hopes for the cherry tomato plant in the garden.

Olive Oil: Used to char the tomatoes and cook the chicken.

Salt & Pepper: Enhances the chicken’s flavor.

Italian Seasoning: I like to sprinkle the chicken with Italian seasoning, the perfect herbs with the burrata cheese and fresh basil.

Chicken Breast: I use one large chicken breast for two servings.

Burrata Cheese: Burrata cheese is a ball of solid mozzarella with a creamy center and shreds of soft mozzarella inside. It is rich, decadent, and delicious. You will find burrata in the grocery store with the fresh cheese. It is typically sold in a plastic tub with two balls of cheese per tub.

Fresh Basil: Sweet basil is one of my favorite herbs. So perfect with cheese and tomatoes.

Preperation

Start by prepping the chicken and tomatoes. Add the tomatoes to a small skillet and sprinkle with salt and pepper. Cook the tomatoes over medium heat until they soften and start to slightly char. Keep an eye on them so they don’t burn.

Drizzle olive oil in a separate skillet. Sprinkle the chicken with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook, undisturbed, for at least five minutes. The chicken will release easily once browned on the first side. Turn the chicken and cook until completely cooked through.

Plate the chicken once it is cooked through. Arrange the charred tomatoes on top of each piece of chicken. Next, separate the burrata ball between the two pieces of chicken. I have found the easiest way to do this is with your hands. Pick up the cheese, tear it in half, and quickly place the halves on each piece of chicken. You don’t want the filling to fall out before being placed on the chicken.

Finally, sprinkle with fresh basil and enjoy. This chicken is delicious on its own with a side or over pasta.

Ingredients
  

  • 10 cherry or grape tomatoes sliced in half
  • 1 Tbsp olive oil divided
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • ½ tsp dried Italian seasoning
  • 1 large chicken breast sliced in half
  • 1 burrata ball
  • Fresh basil torn or chopped, for serving

Instructions
 

  • Drizzle about half the olive oil into a small skillet over medium heat. Add the sliced tomatoes and sprinkle with salt and pepper. Stir occasionally and allow the tomatoes to soften. A little char is desirable, but watch so they don't burn.
  • Sprinkle the chicken with salt, pepper, and Italian seasoning. Heat a cast-iron or iron skillet over medium-high heat. Add the chicken breast and cook undisturbed on the first side. for about 5-7 minutes. Flip and allow the chicken to cook through completely. The length of time will vary based on the thickness of the meat, typically about 15 minutes.
  • Plate the chicken. Arrange the tomatoes over the top of each piece of chicken. Separate the burrata ball in half by tearing your hands. Sprinkle with fresh basil and serve.
