Spring Recipes

It’s time to start thinking about spring recipes!

The weather will still be chilly despite the calendar telling us spring starts on Friday. But we can still start thinking about recipes featuring the bright, fresh flavors of spring.

Never mind, as I write this post, we are in the midst of a blizzard and have received at least a foot of snow. Spring is coming.

Salad

Thai peanut chicken salad is actually on my menu this Friday. Just by chance, I didn’t consider how appropriate a colorful, healthy salad is for the first day of spring. What I did consider is how much I love this flavorful salad.

Main Course

Basil pesto is great any time of year, but it really shines in the spring and summer seasons. Pesto shrimp with risotto is delicious with fresh or jarred pesto.

Chili lime chicken tacos are a quick, easy dinner anytime. A main course that doesn’t require the oven is a great choice as the weather gets warmer.

Pineapple chicken stir-fry is a fresh, colorful take on Asian-inspired food. I like to serve with a green veggie, like broccoli.

Sandwich

Chicken salad sandwiches are a delicious light dinner or lunch. I serve the chicken salad tucked into a pita or wrapped in naan bread.

Sweet Treats

Strawberry rhubarb pie is my favorite springtime pie. The perfect mix of tart and sweet flavors.

Blueberry cobbler is wonderful using fresh or frozen blueberries. I have talked about how I never ate blueberries until a few years ago. Now I keep a bag of frozen berries in the freezer at all times and often enjoy them fresh with my overnight oats.

Oh, Happy St. Patrick’s Day!

I was reading a list of favorite meals to celebrate St. Patrick’s Day. Most contain beef or lamb, neither of which I eat. I do enjoy Shepherd’s pie made with ground turkey.

We plan to go out for an early dinner tonight to celebrate the day.
