Weekend Randoms 9/27/2025

Happy weekend.

I made a new chicken broccoli bake with pesto and fresh tomatoes. Similar to this, with a few twists. Yum.

We took the girls to the vet last week for their yearly check-ups. They had an exam, vaccines, and Bailey had some blood work. She and Bella are starting to show their age, but overall, they are doing pretty well. They turn 16 years old next year, which is 80 in human years.

Football Sundays are going to be different the next two weeks. The Vikings play overseas this Sunday in Ireland and next Sunday in London. So, we’ll have breakfast frittata while watching the game, then our usual football pizza after the game. The Vikings have traditionally done very well overseas, and I am hopeful that continues.

Why urgency exhausts introverts. I feel like urgent is very overused. Like the author stated, most things can wait. And you’re allowed to let them. I love this.

Five kitchen essentials. For me: coffee, fresh spinach, almond milk, frozen salmon, and Greek yogurt. For both of us: broccoli, chicken breast, cheese, onions, and ripe peppers. I have a lot more than five!

Honeycrisp apples used to be the crème de la crème of eating apples. Overproduction of an apple that is touchy to grow has been a challenge.

Despite the summer weather, I am looking forward to baking with apples! I got my hands on some recently, maybe some muffins and a bar recipe I have been wanting to try. 🙂
