Tilapia is a mild-flavored fish, making it a good choice for those who don’t adore fish. I love fish, but Hubby, not as much. But considering fish a healthy source of lean protein, I like adding it to our dinner rotation.

Tilapia Fillets: Try to select fillets of similar size and thickness, so they cook evenly. I always have frozen tilapia fillets on hand for easy dinners.
Salt & Black Pepper: A coating of salt and pepper enhances the flavors
Mayonnaise: Mayo adds richness and allows the cheese and breadcrumbs to stick to the fish. I always use light mayonnaise.
Parmesan Cheese: Sharp, salty parmesan cheese is found in many of my recipes.
Panko Bread Crumbs: Panko bread crumbs are light and flaky, giving the fish a crunchy coating.

Preparation
Crispy parmesan baked tilapia comes together and cooks quickly. I usually prep my sides before starting the fish. A baked potato and broccoli were my sides of choice recently. I microwaved the potato for a few minutes to give it a head start. Once the potato and broccoli were in the oven, I started the fish.
Blot the fish with a paper towel to dry it. This way the mayo won’t slide off. Lay the fillets in a baked dish and sprinkle with salt and pepper. Next, use a butter knife or basting brush to coat the fish with a thin layer of mayo. Finally, sprinkle the grated parmesan and bread crumbs evenly over the tilapia.
Bake until the fish flakes easily, and the topping is lightly browned.
Serve immediately with some homemade tartar sauce on the side.
Crispy Parmesan Baked Tilapia
Ingredients
- 2 tilapia fillets
- salt & black pepper to taste
- 1 Tbsp mayonnaise I used light mayo
- ¼ cup Parmesan cheese grated
- ¼ cup panko bread crumbs
- parsley for garnish.
Instructions
- Preheat the oven to 425° F.
- Spray a baking sheet with no stick spray. Dry the tilapia fillets with a paper towel and place them in a baking dish.
- Spread the mayonnaise evenly over the top of each fillet. Sprinkle each fillet with salt and pepper to taste. Spread each fillet with a thin layer of mayonnaise. Sprinkle the fillets evenly with the parmesan and panko mixture.
- Bake 16-18 minutes, depending on the thickness of the fillets, until flaky. Sprinkle with parsley and serve immediately.
