Crispy parmesan baked tilapia is a simple, healthy main dish perfect for a quick weeknight dinner.
I love fish and place it on our weekly menus at least a few times a month. Husband prefers mild fish that doesn’t taste “fishy”. Tilapia is a good choice. Fish is a nutritious food with many health benefits.
Fish is the perfect choice for a quick dinner as it bakes in under twenty minutes. You can serve it with potatoes and green veggies for a complete meal. We recently had baked tilapia with creamed spinach and mashed potatoes.
Ingredients
Tilapia: Select two similar-sized tilapia fillets. We always keep frozen tilapia on hand.
Salt & Black Pepper: Used to taste to season the fish.
Mayonnaise: A light coating of mayonnaise helps the parmesan and bread crumbs stick to the fish. I always use light mayo.
Parmesan Cheese: Parmesan cheese is one of my favorite ingredients. Just a sprinkle of parm adds so much great flavor. We keep a block of fresh parmesan on hand at all times. The pre-shredded would also work if that is what you have available.
Panko Bread Crumbs: Panko bread crumbs are light and crunchy. They make the coating light and crispy.
Instructions
Preheat your oven to 400 degrees. Prep the fish by drying it with a paper towel. You will do this to ensure the mayonnaise and the toppings stick to the fish.
Spread a thin layer of mayo over each filet. Sprinkle with salt and black pepper to taste. Finally, sprinkle evenly with grated parmesan and panko bread crumbs. Bake for 16-18 minutes as directed.
While our fish dinner is baking, I make hubby a batch of tartar sauce.
Plate and serve immediately.
Husband decided to try cottage cheese on his baked potato instead of sour cream a few months ago. It’s delicious!
I love sweet potatoes. I simply cube them up and eat them. Yum.

Ingredients
- 2 tilapia fillets
- salt
- freshly ground black pepper
- 1 Tbsp mayonnaise I used light mayo
- ¼ cup grated Parmesan cheese
- ¼ cup panko bread crumbs
Instructions
- Preheat the oven to 400° F.
- Spray a baking sheet with no stick spray. Dry the tilapia fillets with a paper towel and place them in a baking dish.
- In a medium bowl, mix the grated Parmesan cheese and panko bread crumbs
- Spread the mayonnaise on both sides of each fillet. Sprinkle each fillet with salt and pepper to taste. Sprinkle the fillets evenly with the parmesan and panko mixture.
- Bake 16 to 18 minutes, depending on the thickness of the fillets, until flaky.
