Baked Balsamic Herb Chicken

Baked balsamic herb chicken is an easy, flavorful dish. The intense, slightly sweet flavor of balsamic vinegar is delicious with chicken. I also added garlic along with rosemary and thyme, my two favorite herbs with chicken.

Chicken breasts, either baked or pan-fried, along with a veggie side, are a staple dinner around here. It’s a balanced, satisfying, and healthy meal.

Elements

Chicken Breast: This recipe uses one large or two smaller chicken breasts.

Balsamic Vinegar: You will find balsamic vinegar in the condiment aisle alongside the other vinegars and oils.

Olive Oil: Keeps the chicken moist and helps the marinade coat it.

Garlic: Adds flavor.

Thyme & Rosemary: Fresh herbs are great, but use dried if fresh aren’t available. I miss my deck herbs when the cold weather hits.

Salt & Pepper: Salt and pepper bring out the flavor. You definitely want to add both.

Preparation

Start by marinating your chicken. I marinated the chicken right before baking and found it very flavorful. If you have time, you can also let the chicken marinate for a few hours. It works either way. This is a good thing for me as I find I often forget the marinating process. I need a BIG reminder, or it doesn’t happen.

Simply add all the ingredients to a Ziploc bag or a shallow bowl. Mix to ensure the marinade thoroughly covers all the chicken.

Add chicken and marinade to a baking dish.

Serve with roasted green veggies and a baked potato for a complete meal.
