Chicken with Mushrooms

Chicken with mushroom is one of my favorite dinners. It consists of juicy chicken, tender mushrooms, and melted mozzarella cheese.

This recipe has been in my rotation for years. I love the combination of chicken and mushrooms.

Elements

Mushrooms: Baby portabella mushrooms are my favorite, but you could also use white button mushrooms. There are so many wonderful mushroom varieties.

Chicken Breast: One medium to large chicken breast sliced in half is perfect for two people.

Flour: Flour helps seal in the moisture of the chicken.

Egg: A beaten egg helps the bread crumbs stick to the chicken.

Bread Crumbs: Panko breading is my go-to. I love the light, crunchy texture.

Butter & Olive Oil: The butter and olive oil combine to brown the breaded chicken.

Mozzarella Cheese: A sprinkle of melty mozzarella cheese is the perfect finishing touch.

Chicken Stock or White Wine: I have made this recipe with a wine a few times, it is delicious! Typically, I use low-sodium chicken stock which works equally well. But this reminds me to add this recipe when I have leftover wine. The mushrooms cook in the stock, or wine, and absorb flavor.

Black Pepper: Enhances all the flavor.

Preparation

Preheat the oven and heat the butter and olive oil in a large skillet.

The recipe starts with breading the chicken. To do this, place flour, a beaten egg, and bread crumbs on three small plates. Coat the chicken in flour, then roll it in the beaten egg. Then, coat the chicken on both sides with bread crumbs. Repeat with both pieces of chicken.

Add the chicken to the hot skillet. Let the chicken brown on one side, then turn and brown on the other side. No need to worry about the chicken being cooked through as it will get plenty of cooking time in the oven.

While the chicken is browning, slice the mushrooms. Add half to the bottom of a baking pan. Arrange the browned chicken over the mushrooms and add the rest of the mushrooms over the top of the chicken. Sprinkle with the mozzarella cheese. Add the chicken stock or wine around the sides of the chicken. Sprinkle with pepper.

Bake for 30 minutes.

Chicken with mushrooms is great with a variety of side dishes. I always serve with a green veggie like broccoli or Brussels sprouts. A baked potato is also a great choice.

Ingredients
  

  • cups sliced mushrooms
  • 2 skinless, boneless chicken breast halves
  • 2 Tbsp flour
  • 1 egg beaten
  • ½ cup bread crumbs
  • 2 tsp butter
  • 2 tsp olive oil
  • 3 ounces mozzarella cheese shredded
  • cup chicken stock or white wine
  • freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400℉. Spray or lightly oil an 8×8 inch pan.
  • Place half of the sliced mushrooms evenly in the bottom of the pan. Reserve the remaining mushrooms.
  • Lay out three small plates. Add flour to one plate. Add beaten egg to the second plate. Add bread crumbs to a third plate.
  • Dip and roll the chicken in flour until the chicken is lightly covered. Roll the chicken in the beaten egg. Finally, roll the chicken in bread crumbs.
  • In a large skillet, melt butter over medium heat and drizzle in olive oil. Brown both sides of chicken in skillet. Place chicken on top of mushrooms, arrange remaining mushrooms on chicken, and top with mozzarella cheese. Add chicken stock or wine to pan around the sides of chicken. Season with black pepper to taste.
  • Bake for 30 minutes. Let rest for a few minutes and serve.
