Weekend Randoms 12/27/2025

Happy weekend.

Lasagna on Christmas Eve seems to be a common theme for a lot of people. For me, I had ricotta cheese in my refrigerator that needed to be used. Plus, I had a hankering for lasagna since it’s been a minute since we’ve had it. It was so good! I make mine with turkey sausage.

Pizza on Christmas Day probably isn’t quite as common. But it isn’t uncommon for us. The Vikings played, so of course we had pizza. They won! Four wins in a row thanks to our outstanding defense. No playoffs this year, but it’s great to see them finish strong.

Our tradition over the last several years has been to go out for a nice dinner to celebrate the holidays. We are going out tonight to our favorite local restaurant.

People used to get married on Christmas Day. Not for romantic reasons, but simply because they have time off work.

The PItt season two premieres on January 8, I cannot wait. I watched every episode as soon as they were released during the first season. Hubby got into it as well, once it became the show everyone was talking about.

I am going to save this list of crowd-pleasing books.

I kept reading that Artificial Intelligence is bad for the environment, but I wasn’t sure why. AI causes an increased demand for electricity and water.

I mentioned how we have recently started feeding the squirrels. The feeder is in the backyard near the ravine. This squirrel made his way up to the deck. He caught the attention of Bailey, who was chattering at him. With Bailey safely confined in the house, no squirrels were harmed. 🙂
