Dinner Rolls


Eek, long time, no post.

Not that I haven’t been cooking, I certainly have. But I haven’t tried a lot of new recipes recently.

I have been meaning to try some homemade rolls for a while. Actually my original idea was homemade hamburger/sandwich buns. These would probably work for a small sandwich bun, but they are dinner rolls meant as a side for a meal.

1/2 cup warm water (110 degrees F/45 degrees C)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 tsp. salt
3 3/4 cups all-purpose flour
1 (.25 ounce) package active dry yeast
1/4 cup butter, softened

1. Microwave water and milk for about 1 1/2 minutes. Place in mixer bowl and add sugar-allow to dissolve. Add yeast and allow to dissolve and foam, about 10 minutes. Mix in egg, salt and butter. Slowly mix in flour and mix for about 10 minutes in stand mixer. Move dough to a bowl and allow to rise for 1 hour.

2. Turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Rolls can also be rolled in 16 round rolls.

3. Bake in preheated oven for 10 to 15 minutes, until golden.

I thought about making the dough in the bread maker but instead decided on the stand mixer with the dough hook attachment. I have been very pleased with the pizza dough I have been making with the mixer and it did a nice job with this dough as well.

The rolls are sweet, buttery and delicious. They are an excellent side for a meal.
