I think a lot of people hear the word “salad” and think of greens, tomatoes, cucumbers, and dressing. Picture what you get at a restaurant when you order a salad as your side option. I have a salad nearly every day for lunch, which sounds boring, right? But they are always different and diverse. Plus, you want a salad that fills you up and doesn’t leave you snacky an hour later. Unless you want a snack, then you go for it.
My lunch salads are a complete smorgasbord. Fresh spinach and pumpkin seeds are always included. From there, it’s pretty much a free-for-all. Bits of leftover veggies are common. This week, some leftover spicy turkey and rice were heated up and added to the salad. Sounds weird, but it works. Part of this is our goal of no food waste, and part of it is a wish for variety.
I discussed my lunch salad a few years ago. They sounded normal. Since then, I have adopted more of an anything-goes mentality. I can honestly say it rarely doesn’t work.
Would I serve these salads to anyone else? Nope! But I like them.
Four people got the hell off the planet for a little while. The crew aboard the Artemis II will be the first team in 54 years to go to the moon.
The 90s, and the 80s for that matter, were a time. There was a lot to like, but not everything. I can honestly say I was never even tempted to buy a brown lipliner. 🙂
