
Grilled lemon chicken with herbs is a delicious summer dinner. These bright, fresh flavors are perfect for an easy, breezy dinner.
Lemon works its magic quickly with chicken, so a quick 30-minute marinade is all you need.
This chicken is delicious with summer side dishes like potato salad or coleslaw. Sweet corn is at its very best right now, another great summer side.
Elements:
Boneless, Skinless Chicken Breast: I use one large chicken breast for two people.
Fresh Herbs: You can use a variety of fresh herbs. I find rosemary and thyme particularly nice with chicken. These herbs also hold up very well in the marinade as opposed to tender herbs like rosemary. Dried herbs are also an option if fresh is unavailable.
Lemon Juice & Zest: Using both the juice and zest of the lemon will really boost the flavor.
Garlic: Fresh garlic is a great accompaniment to the flavors of lemon and herbs.
Salt & Black Pepper: Enhances the flavors.
Olive Oil: Oil brings the flavors together and helps keep the chicken from sticking to the grill.
Preparation
Start by slicing your chicken lengthwise into thin pieces. Depending on the size and shape of your chicken breast, you may get 2 or 3 chicken pieces. The goal is even-sized pieces that are about the same width. Add the chicken pieces to a Zip-Lock bag.
Combine your herbs, lemon zest, juice, garlic, salt, pepper, and olive oil and stir to combine. Pour the marinade over the chicken. Swish the bag around to ensure all sides of the chicken are coated with the marinade.
Marinate for at least 30 minutes or a few hours if you have the time.
When it’s time to grill, remove the chicken from the marinade. The chicken will take about 15 minutes on the grill, depending on its size.
Allow the meat to rest a few minutes before serving.
Grilled Lemon Chicken with Herbs
Ingredients
- 1 large boneless skinless chicken breast
- 2 Tbsp fresh herbs- rosemary, thyme, parsley, or a combination, chopped
- 1 lemon zest and juice
- 2 garlic cloves finely minced or grated
- ½ tsp salt
- ½ tsp black pepper
- 1 Tbsp olive oil
Instructions
- Slice the chicken lengthways into 2-3 pieces. Try to make the chicken the same width so they grill at the same time.
- Combine remaining ingredients in a small bowl. Place chicken and marinade in a container with a lid or a large Zip Lock bag. Marinate for at least 30 minutes or 2-3 hours.
- Preheat the grill. Remove the chicken from the marinade and discard the marinade. Grill on both sides until chicken is done, about 15 minutes.
- Allow the chicken to rest for 5 minutes before serving.
