Instructions
Preheat the oven to 425° F
Peel the carrots and slice them into strips.
Toss the carrots in salt, pepper, and olive oil. Arrange in a single layer in a baking dish for sheet pan.
Roast for 25-30 minutes until fork tender and starting to brown on the edges.
Enjoy immediately.
