1bonelessskinless chicken breastcut into bite size chunks

¾cupred bell pepperchopped

1tspCajun seasoningdivided
¼tspCayenne Pepper
¾cuplow sodium chicken stock
½cuphalf & half
salt & freshly ground black pepperto taste
4oz.dry linguine pastabroken in half
¼cupfresh grated parmesan cheese
Instructions
Heat the oil in a large saucepan over medium heat. Add the chicken, onion, and bell pepper and season with ½ tsp cajun seasoning. Sauté until the chicken is cooked through.
Add the garlic and continue cooking for 1 minute.
Add the chicken stock, half & half, ½ tsp cajun seasoning, salt, and pepper to the pan. Break the pasta in half and add to the pot.
Cover and bring to a boil. Reduce heat to medium low and continue to cook, loosely covered, for 10-12 minutes. Stir occasionally to prevent pasta from sticking to the bottom of the pan. Cook until pasta is done to your liking and there is only about ¼ inch of liquid along the bottom.
Sprinkle with parmesan cheese and stir. Serve immediately.
